Beef Empanadas

Make the dough: In a large bowl, mix flour and salt. Cut cold butter into small cubes and work into flour using fingertips until mixture resembles coarse crumbs.

Beat 1 egg with cold water. Add to flour mixture and mix until dough comes together. Knead briefly, wrap in plastic, and refrigerate for 30 minutes.

Prepare the filling: Heat olive oil in a large skillet over medium heat. Sauté onions until translucent, about 5 minutes.

Add garlic and cook for 1 minute. Add ground beef, breaking it up with a spoon, and cook until browned.

Season with paprika, cumin, oregano, salt, and pepper. Cook for 2 more minutes to develop flavors.

Remove from heat and let cool slightly. Stir in chopped hard-boiled eggs, olives, and raisins.

Preheat oven to 200°C (400°F). Line baking sheets with parchment paper.

Roll out dough on floured surface to 3mm thickness. Cut into 12cm (5-inch) circles using a round cutter or bowl.

Place 2 tablespoons of filling in center of each circle. Fold dough over to create half-moon shape.

Seal edges by pressing with a fork or creating a decorative rope pattern by folding and pinching the edge.

Place empanadas on prepared baking sheets. Beat remaining egg and brush over empanadas for golden finish.

Bake for 20-25 minutes until golden brown. Let cool for 5 minutes before serving.
