Spread the Dijon butter mixture on one side of each bread slice.

  4. 4

Place bread Dijon butter-side down on a clean surface.

  5. 5

Spread Russian dressing on the unbuttered side of each bread slice.

  6. 6

Layer one slice of Swiss cheese on two of the bread slices (dressing side up).

  7. 7

Divide the pastrami evenly between the two sandwiches, placing it on top of the cheese.

  8. 8

  9. 9

Place the remaining Swiss cheese slices on top of the sauerkraut.

  13. 13

Remove from heat, let rest for 1 minute, then cut diagonally and serve immediately.

Chef's Note

"This elevated Reuben features smoky pastrami and a tangy Dijon butter that creates an incredible golden crust. The mustard adds a sophisticated kick that perfectly complements the rich pastrami and tangy sauerkraut. Press gently with a spatula while grilling for that perfect crispy exterior and melted cheese interior."
