Authentic Mexican Refried Beans
Instructions
- 1
Dice the onion finely and mince the garlic cloves.
- 2
Heat the lard or oil in a large, heavy-bottomed skillet over medium heat.
- 3
Add the diced onion and cook for 5-6 minutes until translucent and slightly golden.
- 4
Add the minced garlic and cook for another 30 seconds until fragrant.
- 5
Add the cooked pinto beans along with about half of the bean liquid to the skillet.
- 6
Using a potato masher or the back of a wooden spoon, begin mashing the beans while they cook.
- 7
Continue mashing and stirring for 10-15 minutes, adding more liquid as needed to achieve your desired consistency.
- 8
Season with salt, cumin, and black pepper to taste.
- 9
Continue cooking and stirring until the beans form a thick, creamy paste that pulls away from the sides of the pan.
- 10
Taste and adjust seasoning as needed before serving hot.
Chef's Note
"The secret to restaurant-quality refried beans is patience - don't rush the mashing process. For authentic flavor, save the bean cooking liquid instead of using plain water. Traditional Mexican cooks use lard for the richest taste, but vegetable oil works wonderfully for a lighter version."
