Instructions

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    In the same pot over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes to create a roux, stirring constantly.

    Gradually pour in the milk while whisking continuously to prevent lumps. Cook for 5-7 minutes until the mixture thickens enough to coat the back of a spoon.

    Add the mustard powder, garlic powder, salt, and a few grinds of black pepper to the white sauce. Stir to combine.

    Remove the pot from heat and add the shredded cheddar and gruyere cheeses in handfuls, stirring after each addition until completely melted and smooth.

    Add the cooked macaroni to the cheese sauce and stir until every piece is coated. Taste and adjust seasoning if needed.
