Glazed Honey Carrots

Instructions

  1. 1

Peel the carrots and cut them diagonally into 1/2-inch thick slices for even cooking

  2. 2

Bring a large pot of salted water to a boil and add the carrot slices

  3. 3

Cook the carrots for 8-10 minutes until they are tender but still have a slight bite

  4. 4

Drain the carrots thoroughly in a colander

  5. 5

In the same pot, melt the butter over medium heat

  6. 6

Add the honey to the melted butter and stir to combine

  7. 7

Return the drained carrots to the pot with the honey-butter mixture

  8. 8

Toss the carrots gently to coat them evenly with the glaze

  9. 9

Cook for 3-4 minutes, stirring occasionally, until the glaze thickens and coats the carrots

  10. 10

Add fresh thyme leaves and season with salt and pepper to taste

  11. 11

Transfer to a serving dish and serve immediately while warm...

Chef's Note

"For a beautiful caramelized finish, let the carrots sit undisturbed for a minute or two in the glaze before the final toss. The natural sugars will develop a gorgeous golden color that makes this simple side dish restaurant-worthy."
