Instructions

    In a large bowl, mash about 3/4 of the black beans with a fork, leaving some whole for texture

    Add the oats to a food processor and pulse a few times until coarsely ground

    Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the onion, garlic, and bell pepper until softened, about 5 minutes

    Add the sautéed vegetables to the mashed beans along with the ground oats, breadcrumbs, egg, cumin, paprika, chili powder, salt, and pepper

    Mix everything thoroughly until well combined - the mixture should hold together when pressed

    Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick

    Refrigerate the patties for 15 minutes to help them hold together better

    Heat the remaining olive oil in a large skillet over medium-high heat
