Herb-Crusted Gremolata Chicken
Instructions
- 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2
Pound chicken breasts to even thickness (about 3/4 inch) between plastic wrap.
- 3
Finely chop parsley leaves and mince garlic cloves. Combine with lemon zest in a bowl to make the gremolata.
- 4
Mix breadcrumbs and grated parmesan in a separate shallow dish.
- 5
Season chicken breasts with salt and pepper on both sides.
- 6
Brush each chicken breast with 1 tablespoon olive oil, then press gremolata mixture firmly onto the top of each piece.
- 7
Carefully dip the gremolata side into the breadcrumb mixture, pressing gently to adhere.
- 8
Place chicken on prepared baking sheet, crust side up. Drizzle with remaining olive oil.
- 9
Bake for 20-25 minutes until chicken reaches internal temperature of 165°F (74°C) and crust is golden.
- 10
Let rest for 5 minutes before serving. Garnish with extra lemon zest if desired.
