Instructions

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Pound chicken breasts to even thickness (about 3/4 inch) between plastic wrap.

    Finely chop parsley leaves and mince garlic cloves. Combine with lemon zest in a bowl to make the gremolata.

    Mix breadcrumbs and grated parmesan in a separate shallow dish.

    Season chicken breasts with salt and pepper on both sides.
