Italian Sausage and Peppers

Prick the Italian sausages several times with a fork to prevent them from bursting during cooking.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausages and brown them on all sides, about 8-10 minutes. Remove sausages and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and cook for 3-4 minutes until they start to soften.

Add the sliced bell peppers to the skillet and cook for another 5 minutes, stirring occasionally, until they begin to caramelize.

Add the minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.

Pour in the crushed tomatoes and stir to combine. Season with salt and black pepper to taste.

Return the browned sausages to the skillet, nestling them into the pepper and tomato mixture.

Reduce heat to medium-low, cover, and simmer for 15-20 minutes until the sausages are cooked through (internal temperature of 160°F/71°C).

Remove from heat and let rest for 5 minutes. Garnish with fresh basil leaves before serving.

Serve over pasta, with crusty bread, or on hoagie rolls for authentic Italian sausage sandwiches.
