Tequila Lime Garlic Prawns

Pat the prawns completely dry with paper towels and season lightly with salt and pepper.

Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until the butter starts to sizzle.

Add the prawns in a single layer and cook for 2 minutes without moving them to develop a nice sear.

Flip the prawns and add the minced garlic and red pepper flakes. Cook for another 1 minute until fragrant.

Carefully pour in the tequila (it may flame briefly - keep a lid handy) and let it cook for 30 seconds to burn off the alcohol.

Add the lime juice and remaining butter, swirling the pan to create a light sauce.

Cook for another 1-2 minutes until the prawns are fully cooked and the sauce has slightly thickened.

Remove from heat, toss with fresh cilantro, and serve immediately with lime wedges.
Chef's Note
"The key to perfect tequila prawns is using high heat and not overcooking - prawns should be just opaque and slightly curled. For a spicier version, add a finely diced jalapeño with the garlic. Serve with warm tortillas or over rice to soak up that delicious sauce!"
